This Watermelon Tomato Gazpacho is one of those dishes I come back to every summer. Sweet watermelon, juicy tomatoes, crisp cucumber, smoky chipotle, fragrant basil, and fresh mint come together to create a chilled soup that's light, refreshing, and full of flavor.
It's perfect as a light lunch, an elegant first course, or a beautiful addition to your next summer gathering.

Watermelon Tomato Gazpacho
Serves: 6
Ingredients
6 cups seedless watermelon, cut into chunks
1 English cucumber, diced
1½ cups diced tomatoes
1 red bell pepper, diced
3 green onions, sliced
1 garlic clove
1 cup fresh basil leaves
4 sprigs fresh mint
3 tablespoons apple cider vinegar
¼ cup olive oil
1 smoked chipotle pepper in adobo (or more to taste)
1 tablespoon sea salt
½ tablespoon freshly ground black pepper
Chef's Tip: Reserve a small amount of the watermelon, cucumber, tomatoes, peppers, and herbs for garnish before blending.
Directions
Add all of the ingredients (except the reserved garnish) to a blender and blend until smooth.
Taste and adjust the seasoning if needed. Refrigerate for at least one hour to allow the flavors to meld together. Serve well chilled and top each bowl with the reserved vegetables and fresh herbs for a beautiful finish.
