Salmon Tacos & Aqua De Jamaica
While I was traveling in Mexico in February I was introduced to the many new ideas one of these in particular was Hibiscus.
Like many people I have only had it as a tea but in Mexico the flower is dried and used in many ways.
Hibiscus is high in antioxidants. It’s also a diuretic and rich in Vit C. There are many types out there but the vibrant red one is what is used. It’s known for its tartness and uniques flavor. It is used for sauces for meat, ice cream, drinks with mezcal or tequila with ginger and lime. Culinary dishes that include pork or beef and delicious jams. I had it in a taco with wild rice and mole. Blew my mind.
